Levi is 7 months old today!
Time flies and he's getting so big!

He's sleeping through the night, eating baby food like a champ(still doesn't like fruit), and he grabs things and smacks them around like a big boy. We're still working on the sitting up by himself part but he's getting there. He has so much personality! Can't wait for the future!

Recipe: Chicken Florentine Crepes

I'm just a mom that likes to cook. 

Sunday morning we went to Ihop for breakfast. I got one of their 400 calorie breakfasts and Blake got Chicken Florentine Crepes. I had never had Chicken Florentine or Crepes for that matter. It was soooo good. But I'm pretty sure it was a million calories.

This morning I felt like cooking so I ran to the store and got everything I needed to make my own version of these.

What you need:
Package of skinless, boneless chicken breasts
Mushrooms
Onion
Spinach
1 Garlic Clove
Garlic Salt
Italian Seasoning
Kraft Fat Free Cheddar Cheese

Flour
Milk
Oil
Eggs
Cooking Spray

Since I have never made either of these I just guessed at making the Chicken Florentine.

You're going to need a Large Skillet!

I used the entire package of Chicken ( it makes a ton!). I sprinkled them with the Italian Seasoning and Garlic salt. Cooked them in a skillet with 1 tsp of olive oil on medium heat until they were done. As they were almost done and still in the pan I took a fork and chopped/shredded the meat.

Removed from pan and put in a bowl to set aside.

While the chicken was cooking I sliced one whole package of mushrooms, 1/2 an onion, 1 clove of garlic and sauteed for 5 minutes. I then added the spinach until it was 'limp'. Add the chicken back into the pan and mix together.

To make the Crepes:
I used the Crepe recipe found here. I love the SkinnyTaste.com website! I have made so many recipes off of it and they are all really good! The only thing I changed was using Whole Wheat Flour. Crepes are super easy to make and don't take long at all!

To put them together I took a Crepe, sprinkled some cheese on it and then added a scoop of the Chicken Florentine and sprinkled with a little more cheese. Rolled it up and it was done!

Normally it has a Hollandaise  Sauce on it but I didn't make it since I'm counting calories and it has a lot from the butter! If I were to ever make it I found this recipe that I would use.

Final result
If you've never had a Crepe it's a mix between a pancake and a tortilla. Hence the reason for the coloring of them in this picture. 

Each Crepe is less than 250 calories. Not bad!

Levi's World

Levi will be 7 months old in 11 days :( He's getting so big!

Since he loves water we got out his big boy bath tub and let him play in it.

He is such a funny boy. He 'talks', giggles and smiles all of the time!

We've tried feeding him baby food a few times last month. Once he ate a whole jar of applesauce and loved it. So the next time we tried it again and he wouldn't eat it. I just happened to get some of the vegetable flavors like carrots and sweet potatoes. He is a huge fan! He hates the bananas and anything sweet but eats carrots, sweet potatoes, squash, green beans and even peas! Which I hear is the worst and most babies won't eat it. Not him! He's a little pig!

We started sitting him in his high chair and he does really good. He bangs on the tray and kicks his feet. So funny! Now he eats baby food twice a day and makes a huge mess. But he leans back and opens his mouth and even fusses when you don't keep it coming fast enough. So glad we didn't have to struggle with feeding him!

The one thing we need to work on his getting him in his crib. No he does not sleep in our bed. He sleeps in his rock and play sleeper which is where he has slept since we brought him home. I've just felt more comfortable with it since I was scared to death of SIDS.

He rolls over and sits up but still needs some support. If he didn't have his daddy's big ole' head I'm sure he could support it by now. lol 

His favorite thing to do at the moment is yell! He does it for as long as he can hold his breath. Funniest thing ever. I have a video of him doing it today but I can't get it to load. He does it everywhere we go! And I can't help but laugh when people look.

Today we went to his nanny's and he finally got to meet his uncle Clark! Blake's youngest brother. So glad he has so many people in his life that love him and spoil him!

Weight loss


I've officially made it back to my pre-pregnancy weight!

I'm down 10.6 pounds! I finally joined a gym so I plan on doing an hour or more of cardio a day and then other stuff to tone while I lose weight.

I also bought some 'goal weight' jeans so I can tell if I'm doing good other than looking at a number on the scale.

10.6 down and about 30 to go! At this rate I should hit my goal by Christmas!

Spend Every Moment Like It's Your Last


He's getting so big!

Recently I know two people who have lost a child. One to leukemia  last month. She was under 10 years old. The second was a 1 1/2 year old baby girl who passed last night from abuse. Makes me sooo sad and I could not imagine the pain of having to go through that.

I don't know what I would do if I was in their shoes but I thank god every day for my beautiful little boy and that I at least get another moment with him.

Never take anything for granted!

We aren't going to Nashville's fireworks which are tonight. Little man is asleep in my arms as I type this and it is wayyyy to hot and way to crowded downtown. But we did go to another local firework show last night. I was kinda nervous that they would scare Levi but he loved watching them! So much so that he fell asleep before they ended! lol

Today we relaxed, grilled out and now we're watching fireworks on tv!

In Shape Update

I am horrible at consistently doing the ab challenge. I don't know why I just can't get my butt on the floor and do it! Maybe because it's a million degrees outside and by the time I get home I just wanna sit or play with Levi. But anyway...

So far I'm down 8 pounds! And I've lost 2 1/2 inches off of my hips and waist and an inch off my chest! Yes!

It's crazy how my mind set has changed. Like I HATE eating junk now. Not only does it make me feel like crap but I feel bad when I do eat something yucky and it makes me want to exercise that much more.

The other night our car wanted to act up so we had to stop and ended up eating Backyard Burger for dinner. I should have just got a salad but I ended up getting a hamburger. 850 calories later! How disgusting is that! Last night Blake grilled out Bison Burgers. For the bun, cheese, tomato, onion and mustard it was less than 300 calories. And tasted way better than that 850 calories. I rarely put ketchup on anything now just because it has so many calories and a lot of sugar. I use to load up on some ketchup!

I can't remember the last time I've had a candy bar or chocolate. If I want something sweet this is what I eat...
They're 150 calories for 1/4 of a cup but they're sooo good! I could eat the whole thing . The lid is pretty much 1/4 cup so all you have to do is pour some in there and that's all you get!

I also found this cereal at whole foods...
It's just like Lucky Charms except WAY better! Plus it's whole grain and has no artificial flavors/sweeteners in it. Plus it's only 120 calories for 1 cup. Not bad at all.

Another thing I love is chips and salsa. Salsa has about 10-20 calories for 2 tablespoon which is not bad for a snack. The chips are what get you! This has been my favorite so far...
They say unsalted but I can't tell a difference. 14 chips is 140 calories. Not to bad for a snack with some salsa.
